  • 1 Large Eggplant (about 1 lb)
  • 2 medium Garlic Cloves
  • Juice from 1 lemon
  • 2 tablespoons Tahini
  • 1 teaspoon ground Cumin
  • Kosher salt
  • ¼ cup Extra-Virgin Olive Oil, plus more for serving
  1. Adjust rack to 6 inches below broiler and preheat broiler to high.
  2. Broil eggplant turning occasionally until charred on all sides and tender
  3. Remove from oven and wrap in aluminum foil. Let the eggplants rest for 15 minutes.
  4. Peel the eggplant and discard as much as possible of their seeds and blackened flesh
  5. Place the eggplant in a colander for about 10 minutes to strain the excess water
  6. Blend together eggplant, garlic, lemon juice, tahini, cloves and salt in a food processor into a smooth paste
  7. With the food processor running, drizzle olive oil in a thin, steady stream to incorporate
  8. Adjust seasoning
  9. Transfer to a serving bowl, drizzle with olive oil, and serve with pita bread
